...Located in what was previously the only existing flour mill in Madrid, the Posada de la Villa was another place for accommodation and meals at the time. When the lodging houses in the area fell into disrepair, the Posada was no exception. Many of these houses have been rehabilitated later, among them the Posada de la Villa, which, already in a dire state, was restored by Félix Colomo in 1981. It was transformed into the current roast oven, specializing in traditional cuisine, such as its cocido madrileño made in a clay pot on the ashes of straw and oak logs, or the suckling lamb roasted in a clay pot in the old Arab oven.
