At the age of 9 he was already cleaning squid and anchovies in the family business and at the age of 11 he was already cooking alongside his father, Pepe, whom he also accompanied to the catering services he provided throughout Spain.

In 2003, together with his partner Mila Nieto, he launched his particular interpretation of gastronomy in the current Qüenco de Pepa. Their main concern is to control the origin of the product, always taking care of sustainability and therefore respecting the seasons.
