...It is not a family bakery, because since it was founded it has been passed from bosses to employees. Its genre is the traditional artisan cake, highlighting some C-shaped and lemon-flavored pastries that were called council cakes because they were made, to be served when the Council of State was held. His workshop follows the traditional Madrid calendar: Roscones de Reyes, San Antón rolls, silly and smart donuts, San Isidro sugar cubes, saint's bones and fritters, the Almudena crown, etc. In 1892 the reform was made to which the store owes its current appearance: mahogany from Cuba, carrara marble and bronze.
