The program " El Cortejo de la Sardina: We're going for sardines!" ( download it HERE ) celebrates its fourth edition in Carnival 2023 with a tour of more than a hundred places in the city where you can taste original versions of the "carnival sardine".
On time for your appointment, on Thursday, February 16, 40 days before the festivity of Holy Thursday, the 2023 Carnival week begins, which will end on Wednesday, February 22, Ash Wednesday.
One more year the city will enjoy parades, workshops, cultural activities... and the Great Carnival Parade, which will once again tour the streets after two years of absence and will do so in Madrid Río and Matadero Madrid, which will become the epicenter of the carnival festivities.
And since there is no party that is not celebrated around a table, with a typical dish or dessert, with Carnival the fourth edition of the " El Cortejo de la Sardina" route returns, an initiative in which more than a hundred establishments (market stalls, pastry shops, restaurants, hotels...) offer their special and original interpretations of the sardine, the undisputed protagonist of one of the most traditional celebrations of these festivities, the Burial of the Sardine.
To this initiative, promoted by the General Directorate of Commerce and Hospitality of the Madrid City Council (Area of Economy, Innovation and Employment), in collaboration with the Madrid markets and the associations ACYRE (Association of Cooks and Pastry Chefs of Madrid), ASEMPAS ( Association of Artisan Pastry Shops of Madrid) and Las Letras Street, the chefs and merchants from nearly a hundred pastry shops, market stalls, cafeterias and restaurants have joined in, presenting their original sweet and savory proposals, turning simple sardines into the protagonists of succulent sweets, signature dishes and tapas.
The sardine has been a source of inspiration for chefs, cooks, pastry chefs and confectioners, who have made the most select desserts, cookies and chocolates and prepared multiple and original salty versions of smoked, battered, fried, pickled sardines, in ceviche or marinated, in empanada, in paella, pizza or arepas, accompanied by cheese, guacamole, ratatouille or jowls.
