This carnival returns to the sardine route , a unique gastronomic proposal to say goodbye to the carnival.

The 2022 edition of the program ' We're going for sardines!' (download pdf here ) ) offers you a tour of nearly a hundred places in the city where you can taste original versions of the “carnival sardine”.

There is no party that is not celebrated around a table, with a typical dish or dessert. This is the reason why the city's pastry chefs, cooks, confectioners and merchants have wanted to join the Madrid carnival offering their special interpretations of one of the most traditional celebrations of these festivities, the burial of the sardine. The program 'El Cortejo de la Sardina: We're going for sardines!' celebrates its third edition with a tour of nearly a hundred places in the city where you can taste original versions of the "carnival sardine"

The markets of La Cebada, Antón Martín, Santa María de la Cabeza, Guillermo de Osma, Ibiza, Chamartín, Prosperidad, Tirso de Molina, San Isidro and Las Ventas, as well as various pastry shops and restaurants from 15 districts participate in this program that It will keep until mid-March.

Chefs and merchants from nearly a hundred catering and hotel establishments have joined this gastronomic initiative, promoted by the General Directorate of Commerce and Hospitality of the Madrid City Council, who have presented their proposals for this typical fish both in its salty version as sweet, turning simple sardines into the protagonists of succulent dishes and signature tapas. Thus, in addition to chocolate sardines and other sweet carnival sardines, you can find multiple salty versions of smoked, battered, fried, pickled sardines, in ceviche or marinades, in empanadas, in paella, pizza or arepas, accompanied by cheeses. , guacamole, yogurt, ratatouille or double chin.

The sardine has also been a source of inspiration for pastry chefs and confectioners who have used its silhouette to shape the most select desserts, cookies and chocolates.

This procession of sardines has the support of the Association of Cooks and Pastry Chefs of the Community of Madrid (ACYRE), the Association of Artisan Pastry and Bakery Entrepreneurs (ASEMPAS) and the Madrid markets.
