Madrid Fusion 2026 returns from January 26 to 28 as the epicenter of world gastronomy

The capital will once again become an international gastronomic benchmark with the celebration of Madrid Fusión 2026 , which will take place from Monday 26 to Wednesday 28 January 2026 , also at IFEMA Madrid.

For three intense days, renowned chefs, young talents, producers and industry professionals will come together to share knowledge, innovative techniques and reflections on the present and future of cooking.

Under the theme of this edition, focused on the evolution of the relationship between the restaurant and the diner, Madrid Fusión will address topics such as sustainability, culinary creativity, the personalization of the gastronomic experience and the value of local products.

In addition to presentations and live demonstrations, the congress will offer tasting areas, showcookings and professional meetings, consolidating Madrid as a key city for understanding contemporary gastronomy on a global level at the end of January.
