THE IV CASQUERÍA ROUTE RETURNS TO MADRID WITH MORE THAN 25 RESTAURANTS AND SPECIAL ACTIVITIES

From November 8 to 30 , the Community of Madrid will be the stage for the fourth edition of the Ruta de la Casquería , an initiative created and organized by Alberto De Prado Ilzarbe, director of Qué Rico España. This event seeks to rescue and give prominence to traditional casquería recipes, which have been part of Madrid cuisine for generations. 25 restaurants will participate in this edition, including three Ecuadorian ones, which will bring an international vision to this tradition.
This gastronomic celebration is supported by Casquerías Óscar , a family business with 90 years of experience in the distribution of offal products. Its current owner, Óscar Méndez, highlights that the route “dignifies the profession and helps preserve traditional recipes”, ensuring that the gastronomic legacy of the family and the product remains alive.
In addition to the offal on offer in the restaurants, the Route includes special activities such as cooking shows on leftover meat, carried out by chef Ramón Martín from the Lumbre school and blogger David Luengo from Cocinando en Guadarrama . During these exhibitions, products from sponsors such as Fabicarne and DAPSA will be used.
The route will also have an international touch thanks to the participation of three Ecuadorian restaurants, who will provide typical Latin American offal flavours. Additionally, raffles will be organised on social media and through the event's official website. Participants will be able to win gastronomic experiences, such as a meal at the Michelin-starred restaurant La Tasquería by chef Javier Estévez, as well as at other restaurants on the route. There will also be a raffle for wines from DO Vinos de Madrid and visits to local wineries.
