On September 22 and 23, the Ortega Marañón Foundation (Madrid) will host the third edition of OríGenes Gastronomic Festival, a boutique event born in the midst of a pandemic that , after the success of its two editions in Barcelona, lands in Madrid. After hosting 350 daily attendees at its premiere, the festival is establishing itself, and seeks to become the benchmark, both for professionals in the sector and for lovers of gastronomy, of a pioneering gastronomic event format designed to approach gastronomy from the proximity, sustainability and awareness.

OríGenes Gastronomic Festival is a sustainable gastronomic experience. For 8 hours, and in the middle of nature, attendees will take a trip throughout the country to meet in person 9 artisans who make unique products, who will explain their history and cook dishes designed exclusively for the festival, paired with a selection special exciting wines from Quim Vila. In addition, throughout the day there will be live music, conscious talks by leaders in gastronomy, culture and sustainability, and workshops by creatives who innovate on the future of human nutrition.

“The purpose of oríGenes is to become aware of the ancestral process behind each food, to promote responsible production and consumption through knowing the real history of each product, connecting producers and consumers, and thus be part of the change that must be made.” to create the gastronomy of the future,” said Lluís Cintas, founder of the festival. “As a result of the pandemic, there has been an awareness regarding gastronomy, and from the festival we want to give voice to that change and help continue transforming our gastronomic habits towards a healthier and more sustainable life.”

9 protagonists, 9 stories that leave their mark

Among the protagonists is, for example, Anselmo Pérez (Salamanca), who produces 100% acorn-fed Iberian products in his pasture with only 200 animals. His artisanal “beak” cutting technique has gone around the world. On the other hand, Gonzalo Coalla (Madrid), who has great knowledge about cheeses in Spain, and will show us his way of approaching producers to obtain extraordinary cheeses and bring them to the city. Xesc Reina, (Can Company, Mallorca) , one of the main innovative artisans of sobrasada in the country with its native and peculiar black pig.

For his part, Carlos Piernas, (Carpier, Catalonia) , will repeat at the festival, officially presenting his new smoked preserves product that he has been researching for more than 3 years, and Pepe Fortea (Territorio Paella, Valencia) , will explain the secret of traditional rice dishes. Viri Fernández, (El Llar de Viri, Asturias) , an enterprising woman, will cook us her fabada recognized with the award of “the best fabada in the world” and will share the secrets of her fabes.

The Community of Madrid will be present with M certified products spreading the quality and proximity of Madrid products and the Ministry of Agriculture, Fisheries and Food with a special tasting of award-winning oils from Foods of Spain.

To finish with the sweet universe, Albert Roca (Sant Crio Gelats, Barcelona) , will explain how to make innovative artisanal ice creams with local products and Juan Ángel Rodrigálvarez (Cankel Kakao, La Rioja) , will bring the traditional “bean to bar” chocolate technique ” in which he is a pioneer in Spain.

The gastronomic proposal will have a pairing created by Quim Vila, from Vila Viniteca , with a selection of exciting wines, and on the other hand, a pairing of special beers by Cervezas Alhambra and the collaboration of Vermut Petroni and Grupo Emperador with their iconic Brandy and the Euroselecció Riedel cups.

Feel, discover, create: Gastronomy with added value in a privileged environment

oríGenes seeks to convey the message of change in gastronomy to its attendees using three words: Feel, discover, create. Feel gastronomy thanks to the proximity and conversation with its producers, thus discovering new products and talents and, in this way, creating a better and more sustainable future for gastronomy.

Therefore, the festival offers added value to complement the gastronomic proposal. Attendees will be able to enjoy inspiring talks in the Ortega - Marañón Foundation auditorium. Among them, specialists in gastronomy, culture and sustainability, Jesús Terrés (Hedonist Guide Director) and Juanjo López (Owner of the Tasquita de Enfrente) will participate.

In addition, there will be workshops by innovative creatives, focused, in this edition, on food waste, with open classes on sourdough bread (José Roldán), among others. Finally, there will also be live music by the Tuccis Band and signature cocktails.

Sustainability at all levels

The objective of oríGenes Gastronomic Festival is to promote sustainability in all areas of gastronomy and events. For this reason, the festival will have collaborators such as Le Nouveau Chef, with sustainably designed chef jackets, Klimer with 100% compostable tableware, or solutions to convert all organic waste on site (more than 6,000 plates and cutlery) into fertilizing compost.

In addition, the festival tracks its ecological impact through a Carbon Footprint report from the consulting firm Creast, offsetting its carbon footprint to remain the first sustainable gastronomic festival in the country.

oríGenes Gastronomic Festival is promoted by two entrepreneurs who are specialists in communication and design of sustainable gastronomic experiences: Lluís Cintas and Ana Godó.
