We want you to feel at home and that there is always something delicious to eat. Help us recover that heritage of Madrid that is vermouths, negronis and various characters; contemporary lunches, mountain casseroles, organic beef meatballs from the Cantabrian cooperative Siete Valles de Montaña with a blond dipping and dipping sauce, and eggs like the old ones: organic and with spherical yolks. La Carmencita welcomes locals and those who come from outside between hake from the Santander market and roasted kid.

Carmencita is Chueca. Carmencita is the tavern of freedom where you can eat and talk about whatever you want, without filters. Carmencita is a refuge for recipes from the past, for organic chicken in pepitoria with dipping sauce. Carmencita is the history of Madrid. As Santos Juliá told in his books about Madrid, Carmencita, since 1854, has experienced progressive revolutions, independent republics, historical pandemics, unjust wars, dictatorships without freedom and flourishing democracies. Carmencita is alive.

Carmencita has on its tables the remains of the words of Miguel Hernández, Lorca, Neruda and many others who gathered at the table in front of the bar. The La Carmencita bar is more than 150 years old and we are still the same, serving a vermouth from 1917 from a Monsant winery that is a UNESCO heritage site. Like our bar, which is the heritage of the Community of Madrid and cannot be touched.

Carmencita is beef meatballs with patented blonde sauce. And you come to enjoy the cooking of a team that starts at 8 in the morning with their pout making chup-chup. They carefully peel and cut each vegetable freshly brought from organic farmers in El Súper de los Pastores.

La Carmencita is a shepherd's tavern where everyone has their name on their plate. His young children come to eat, and they scream with excitement when they see their father in the menu, as happened to Chencho. Carmencita are stories like those of Rafa, a shepherd from Picos de Europa, who they went to visit, letter from La Carmencita in hand, to ask him if it was true. And with that voice tuned by years and years of whistling at goats, he answers that of course yes, until then no one had given a name to his work.

Carmencita is what is not left: handmade tableware from the 19th and early 20th centuries; cutlery from the first half of the 20th century that helps make your food taste tastier. Carmencita wants to continue being that historical archive of Spanish recipes that our grandmothers made.

Carmencita are wines from small wineries, from winegrowers who recover vineyards and make them like they did 100 years ago. From organic farming and a way of taking care of the land, tilling it, pruning and harvesting the grapes by hand. Little by little pressing the grapes to extract that juice that then warms our souls in this tiled tavern that you want to take home.

In our teams there are people from different countries, women and men, young and old. Some of us come from organizations in favor of social inclusion and others had to cross Africa to reach Madrid.

To all of us who are part of La Carmencita, and to all the producers who work with us, we are very excited that you bring your friends and acquaintances to our tavern when they come to visit Madrid. It gives meaning to everything we do.

At La Carmencita we try to make Madrid and a cleaner world because we only work with small national producers who, with their extensive agriculture and livestock, take care of the forest, the meadows, the mountains, the pastures, reducing the carbon footprint to the maximum. .
