...On the lower floor, Paloma Fang brings to Madrid the popular Japanese taverns or izakayas: a street food stall, with the kitchen in the center of it and the diners seated around it, from where they can see how the dishes they have prepared are prepared. In addition, at the end of this first room, you will find an izakaya as a table with its typical awning and its Japanese lanterns. As a contrast, Paloma Fang has also wanted to bring to this first project, a memory of her childhood: the summer fairs in Japanese cities such as Osaka and Kyoto, where she herself tasted the most typical dishes of the country's streetfood cuisine. For this reason, you will also see a bar with stools decorated as if it were a traveling toy stall, with authentic Japanese dolls and souvenirs from the 90s.
On the upper floor, we access the private sphere: the traditional houses of the Japanese country. On the left, a tatami-style booth inspired by kitchens where, in addition to cooking, the family sits around the table to eat. To the right, a room with more tables and shouji door decorations.
On the menu, you will not find dishes adapted to the gastronomic taste of the West, but rather the most typical ones from Japan. Prepared by chefs who are experts in this type of cuisine, Ninja Ramen specializes in this soup that gives the restaurant its name, cooked for 12 hours so that the broth acquires a unique consistency and color, seasoned with spices or select ingredients such as truffles and wayu meat The starters, for their part, are characterized by being dishes that you will only find in street food stalls in Japan, such as takoyaki or yakitori. We also offer baos and sushi for the more traditional, although with gourmet ingredients such as crab, oxtail or eel.
