Its origin, as an inn and eating house, is linked to the town of Fuencarral, where the inn served travelers from the road from France and those arriving in Madrid. Always in the hands of the Guiñales family, the inn was known by different names depending on the time
...Fuencarral lived by working in the fields, agriculture and livestock, it was also a royal hunting area and, therefore, it housed the Royal Huntsmen. Thus we find references to the "Mesón Nuevo", "Casa de la Silvestra" or "Casa de La Pascuala". In its menu, the homemade stews stand out, the rabbit with garlic and the roast lamb in a wood-fired oven, washed down with the broths from its own cellar. Among its clients we can name King Juan Carlos I himself and illustrious figures from the arts, sports and entertainment.
