...Our founder is no longer with us, but as we said at the beginning, he will continue to be the soul of Eiffel. Currently, Carmen Hidalgo (his widow) runs the business and is in charge of the kitchen, which also includes her daughter Ana.
Miguel and Mayte follow in their father's footsteps at the front of the room, taking care of customer service.
